Sweet Potato Bread Pudding
Serves 10-12 12 Cups French Bread, cut into 1” cubes Preheat oven to 350. Prepare large 8oz. capacity muffin tin by buttering the cups generously. Set aside. Place bread in a large bowl. In a heavy bottom sauce pot, heat the cream & milk, sugar & spices until sugar is dissolved & milk mixture is hot to the touch. Whisk eggs in a bowl & slowly whisk in hot milk mixture. Pour milk mixture over bread & add the remaining ingredients & stir until the bread is well moistened. Spoon bread pudding into greased large muffin tins & bake for 20-30 minutes until puffed & golden brown. Serve Warm w/ Caramel Sauce.

Caramel Sauce
In a large saucepot, combine everything except the vanilla extract. Stir together over high heat until the sugar is dissolved, butter is melted & mixture comes to a boil. Boil for 10 minutes stirring, occasionally. Remove from heat & pour in vanilla. Transfer sauce into a quart size container. This sauce can be poured into jars & sealed & given as gifts or kept in the refrigerator until ready to use. This is best warm or at room temperature. Serve w/ apple fritter, bread pudding or over ice cream.
